Easy microwave caramel popcorn that’s dairy free!

I had a craving for caramel popcorn but I didn’t have the time nor the desire to wait 1.5 hours to enjoy it. My usual recipe takes far too long to be an acceptable last-minute treat. So I surfed the web searching for a quick and tasty alternative that would satisfy my sweet tooth.

To further complicate matters we had a dairy-free visitor and diet restrictions limited ingredients. I ended up combining two recipes to make this tasty treat in 15 minutes.

This recipe looked easy, but it called for paper bags and I didn’t have any. This recipe suggested the bag was needless for microwave popcorn, but it wasn’t caramel.

I took the best of both recipes and came up with this:

Fill a large bowl with popped pop corn (about 4 quarts). I used my air popper but you can prepare it any way you like including the bag-less recipe above.

In a microwave safe glass dish mix 1 cup brown sugar, 1/2 cup VEGAN margarine (dairy free), 1/4 cup corn syrup, 1/2 tsp salt, 1 tsp vanilla extract. Cook for 3 minutes in the microwave, remove and stir until well mixed, microwave for an additional 1.5 minutes. Remove and add 1/2 TSP baking soda (DO NOT SKIP THE BAKING SODA).

In a large bowl pour sauce over popcorn and mix well. Place covered popcorn in glass bowl with lid and microwave on high for 1 minute and ten seconds. Remove, stir and repeat. (I cooked my coated popcorn in 3 batches because I didn’t have a glass bowl large enough to cook it in one batch.)

Dump popcorn onto waxed paper and spread it out so it can completely cool.

From start to finish this was a 15 minute delicious adventure.
